Easy Rocky Road Recipe!

Today I thought i'd share a recipe that is one of my new faves! It is really easy and tastes so good!

You will need:
♥ 300g Milk Chocolate
♥ 125g Butter (preferrably unsalted)
♥ 100g Digestive Biscuits
♥ 100g Marshmallows (it's easier if they are mini)
♥ 1 Tbsp of Golden Syrup
♥ A baking tin lined with grease proof paper

First I melted the chocolate in the microwave, i initially put it in for 30 seconds but kept putting it back in for 10 seconds until it was of the right consistancy as i did not want to burn it. Then i melted all of the butter in a pan, once melted i put the melted chocolate in with it and added the tablespoon of golden syrup.

I broke the biscuits in to pieces and added them to the chocolatey mixture, then added the marshmallows. I couldn't find any mini marshmallows in the shop by me so i bought some big ones and cut them up. This was quite messy and time consuming, however they did create a really cool marbled effect on the top of the rocky roads as they were more gooey once cut up - so if you want this, then cut up some big ones! I then added the mixture to the lined tray and popped it in the fridge for 2 hours. Then do what you want with the leftover melted chocolate in the bowl and the spare marshmallows, and don't feel guilty about it because all that stirring was a proper workout!

This is so delicious and definitely worth a try! It doesn't recquire many ingredients and you don't even need to put it in the oven - it's really my kind of recipe!

What do you think?

Thanks for reading Xx.

  7. I love rocky road, it's so easy to make, but I'm the absolute worst for eating all the melted chocolate, and attempting to eat the rocky road before it's set. It's all too tempting!
